You should hear chef/owner Chris Molinari talk about meat. With native New York accent, he talks about it like an artisan and the third generation butcher he is. Frank's has changed locations a few times, but has been in the neighborhood since 1912. Molinari waxes nostalgic, "My father used to sell 60 dozen rolls and danishes and a thousand containers of coffee back when he first opened," he says -- all business from the meatpackers. Now inside the Chelsea Market, Frank's still draws customers from prior locations. Says Molinari, "I get my own following of customers, some of my father's and even a couple of my grandfather's customers. It's still a family business." He laughs, "And my mother is still very much the boss." Steaks are what Frank's is known for, and meat is still bought at the Gansevoort Market, dry aged in-house, and on view in the window at the butcher shop inside the Chelsea Market.
